Harissa chicken traybake with peppers and feta

180c fan, serves 2

Ingredients

90g harissa paste
2 tbsp red wine vinegar
600g boneless, skinless chicken thigh
2 red onions, cut into quarters
large roasted peppers from a jar, cut into chunky pieces
Bell peppers, cut into chunks
100g feta cheese, chunked

Method

Mix the harissa paste with the red wine vinegar in a bowl, add the chicken and onions

Add to a baking tray with the bell peppers

Cook in the oven for 18mins

Turn everything and add the feta and peppers.

Cook for another 10mins

Serve with cous cous
