Onion Garlic Plum tomatoes Tomato paste 2 tbsp Orzo 190g Chicken stock 400-500 ml Chicken thigh 600g Spinach 100g Soft cheese 100g Parmesan 50g Oregano Mixed herbs Smoked paprika Chilli flakes Pepper
Method
Fry onion and tomatoes for 5 mins Add garlic and fry for further few mins Add tomato paste and stir Add seasonings Add dry orzo and stir Add chicken stock gradually, leave to simmer stirring occasionally Whilst orzo is cooking, fry chicken in water until cooked, add seasonings at the end when water has evaporated After 10 mins add spinach to orzo and mix, then add chicken in and mix When nearly done add in cream cheese and parmesan Serve
